Commercial waste reduction

Why it matters

Reducing waste is one of the most effective ways businesses can lower their environmental impact, save money on disposal costs, and support Louisville’s broader waste diversion goals. Among the most impactful strategies for commercial waste reduction is diverting organic materials from the landfill through composting.

What we're doing

We're supporting local businesses with programs and partnerships that make waste reduction easier and more cost-effective:

Get involved

  • Start commercial composting: Sign up for commercial composting services today!
  • Train your team: Implement food storage and labeling practices to reduce spoilage.
  • Donate surplus: Partner with local food banks to put your excess food to good use.
  • Share your efforts: Let your customers know about what waste reduction initiatives you're implementing.

Why it matters

When organic waste ends up in a landfill, it decomposes without oxygen and produces methane. Methane is a greenhouse gas more that is 20 times more potent than carbon dioxide over its lifetime.

Composting keeps these organics out of landfills and returns valuable nutrients to the soil, reducing our greenhouse gas (GHG) emissions and improving Louisville and Boulder County's overall soil health.

What we're doing

We partner with Republic Services and A1 Organics to offer bi-weekly commercial compost pickup for businesses that opt in. Compost service alternates with recycling to reduce truck traffic and costs.

What to compost:

  • Food scraps: produce, bread, bones, cheese, meat, eggshells, coffee grounds
    • Be sure to remove stickers, rubber bands, twist ties, filters, and tea bags
  • Yard waste: leaves, twigs, grass, flowers, branches
    • Keep out rocks and dirt!
  • CMA-certified three-gallon compostable bags: if you do not use these, all items must be placed unbagged and loose in your compost cart
    • Anything larger or unverified is no longer accepted

What NOT to compost:

  • Paper products: towels, napkins, pizza boxes, coffee filters
  • Compostable service ware: utensils, plates, straws (even if labeled “compostable”)
  • Large paper bags or Kraft bags
  • Glass, metal, and plastic

Get involved

  • Double check accepted items: Review the full list of what goes in and what stays out.
  • Prepare your compost: Remove produce stickers, rubber bands, and twist ties.
  • Train your staff: Make sure everyone knows the updated rules to keep our compost stream clean and efficient.

Why it matters

Preventing food waste saves you money, reduces overall disposal costs, and keeps edible food feeding people instead of landfills.

Businesses that actively reduce food waste will attract more environmentally-conscious customers and better prepare themselves for emerging food waste reduction goals across Colorado.

What to do

We want to connect you and your business to the best practices, tools, and partners that will help you reduce food waste at the source. Here's some simple steps to get you started:

1. Train staff

  • Teach proper storage and labeling to extend shelf life.
  • Use clear “prep,” “freeze by,” and “use by” date labels.
  • Follow First In, First Out (FIFO) inventory rotation.

2. Track and monitor waste

  • Log discarded food by type (e.g., scraps, spoilage, leftovers).
  • Use the data to adjust purchasing, prep techniques, and portion sizes.
  • Try tools like LeanPath or EPA’s Food Waste Audit Tool.

3. Donate surplus

4. Write a food waste reduction policy

  • Include donation, storage, and waste guidelines in your operations manual.
  • Assign a “waste reduction lead” to track progress and ensure accountability.

5. Share your success

  • Highlight your efforts on your website, menus, or in-store signage.
  • Customers are increasingly drawn to businesses that prioritize sustainability.

Get involved

  • Start tracking today: Even a week of data can highlight big opportunities for you to cut waste immediately!
  • Find a donation partner: Connect with local food banks to set up regular pickups for excess food.
  • Make it a part of company culture: Include waste reduction in your staff onboarding and training meetings.
